Father’s Day, Pana style.

Discover the man behind the brand in our Father’s Day Q&A with Pana Organic founder Pana Barbounis and his beautiful family (furry and otherwise).

1. How are you spending Father’s Day this year?

It will no doubt will begin with an early morning walk with my wife, it’s good to find a moment of quiet before the day unfolds. Then I will immerse myself in the kitchen and cook for my three kids. This is how I relax.. Then it will most probably be a day of fun, cards, and board games.

2. What does being a parent mean to you?

It’s something to never take for granted, a miracle! I’m super grateful.

3. What inspires you as a parent?

The growth of my kids, their own personalities, and their take on life, how amazingly they adapt and take on challenges.

4. How does your family inspire you?

Well.. if I start with my parents, they gave me an unbelievable start to life with lots of love, food and family always just being around. This still continues! My wife, our growth together and learnings, holding the space for each other. And of course, my kids, their own motivations of life are an inspiration.

Every year we organise a tree planting family day, it’s the ultimate gift of time with my wife and kids, time spent with nature.

5. How do you juggle work and parenting?

Don’t juggle! It’s part of life and you learn to love it.

6. What you would love to receive this father’s day and why?

For the past few years, I have combined my birthday (Leo) with Father’s Day. We have organised a tree planting family day, the ultimate gift of time with my wife and kids, time spent with nature. And… a gift that just keeps on giving. Due to the current unsettled environment, we couldn’t plan this ahead, so a Pana Organic Hot Chocolate made for me at any point through the day, will suffice this year!

Banana loaf but extra 👌 Grab a bag of Chocolate Pieces, a bowl, you most likely have these ingredients already. Recipe below!⁠⁠

What you need⁠⁠
½ cup milk of your choice⁠⁠
½ teaspoon apple cider vinegar⁠⁠
2 cups flour or gluten-free flour blend⁠⁠
1 teaspoon baking soda⁠⁠
½ teaspoon baking powder⁠⁠
½ teaspoon cinnamon⁠⁠
1 teaspoon vanilla powder(optional)⁠⁠
pinch of salt⁠⁠
½ cup olive oil⁠⁠
¾ cup sugar⁠⁠
4 small ripe bananas (mashed)⁠⁠
1 cup Pana Organic Chocolate Pieces⁠⁠
⁠⁠
What you do⁠⁠
Preheat your oven to 175°C and line a loaf tin with baking paper.⁠⁠
⁠⁠
In a large bowl, add your milk and apple cider vinegar. Let these two sit for a few minutes.⁠⁠
⁠⁠
Now add in the remaining ingredients. Gently fold through with a wooden spoon until combined.⁠⁠
⁠⁠
Transfer the batter into your lined loaf tin. ⁠⁠
⁠⁠
Bake for around 60 minutes. At the 45 minute mark, insert a skewer into the centre loaf to see if it is done. It should come out mostly clean. It may or may not need the extra 10 minutes depending on your oven.⁠⁠
⁠⁠
Once ready, remove from the tine and transfer to a cooling rack. Leave to sit for around 15 minutes and slice!⁠⁠

½ cup oats⁠⁠
¼ cup pitted dates⁠⁠
pinch of sea salt⁠⁠
1 tbsp melted cold-pressed coconut oil⁠⁠
⁠⁠
Caramel⁠⁠
2 cups Medjool dates, pitted⁠⁠
1/2 cup almond butter⁠⁠
1/4 cup Cashew Caramel⁠⁠
1/4 cup pure maple syrup⁠⁠
1/2 teaspoon salt⁠⁠
⁠⁠
Chocolate layer⁠⁠
170 grams Mylk Chocolate Pieces⁠⁠
1 tbsp coconut milk⁠⁠
⁠⁠
What you do⁠⁠
To prepare the base, line a 20 cm square slice tin or tin of similar dimensions with baking paper. ⁠⁠
⁠⁠
Add all the base ingredients to a food processor and process until the mixture resembles fine crumbs. ⁠⁠
⁠⁠
Using a spatula, press the mixture into the base of your tin and place in the fridge to set.⁠⁠
⁠⁠
To make the salted caramel layer, add all the ingredients to a blender and process until thick and smooth. ⁠⁠
⁠⁠
Spread over the base and place in the fridge while you prepare the chocolate layer.⁠⁠
⁠⁠
To prepare the chocolate, place a heatproof bowl over a small saucepan of simmering water (the double boiler method) and using a spatula stir frequently until melted and smooth.⁠⁠
⁠⁠
Once set, remove and slice into bars or squares. Return to the fridge to store, removing slices as required. Keeps for up to 3 months but may not last 3 days! 😄⁠⁠

For a standard cake, you’ll need:⁠

250g Mylk Chocolate Pieces⁠
85ml coconut milk ⁠
⁠
What you do:⁠
⁠
Use a double boiler to heat your coconut milk. ⁠
⁠
Pour over your Chocolate Pieces, stir with a spatula until smooth. ⁠
⁠
Let cool until you have a spreadable consistency. It can take up to an hour.⁠
⁠
Work fast, frost your cake, decorate if you’re feeling it and EAT!⁠

Let your Pana Organic Vanilla Bean Frozen Dessert soften up a bit before scooping two XL scoops into a big sized glass. Blend everything else plus an extra scoop of the frozen dessert and pour the milkshake into a glass. Pana Organic 100% Cacao Powder, to finish⁠⁠

Place the coconut milk and oat milk in a medium saucepan and bring to a simmer. Over medium-low heat, whisk in 4 pieces of Pana Organic Mylk chocolate, Pana Organic Coco Crunch, chia seeds and maca powder until the chocolate dissolves, and the mixture is warm. ⁠⁠

Transfer to a high-speed blender, blend and serve in your favourite mugs or bowls with extra sprinkle of Pana Organic 100% Cocoa Powder or, for an added bite, the Pana Organic Coco Crunch. ⁠⁠
